Our headquarters in Pendleton, Oregon is not only a distillery, but also a fantastic coffee bar in the morning and a restaurant in the evening. Needless to say we truly love coffee and knew that a coffee vodka would be an important crossover for our spirit lineup.
To produce this spirit we add hundreds of pounds of whole bean, ground, and cold brew coffee and a few vanilla beans to our high proof grain neutral spirit. After a few days of steeping, we will add water to proof down the spirit to our bottling strength. We filter the product as we fill bottles, yet some fine coffee particles may make it through these filters, like in a french press, to continue adding beautiful coffee flavor over time.
DISTILLER’S NOTES
This spirit is always a fun production. After steeping the coffee in the spirit, the spirit is a beautiful dark mocha color that makes our in house instruments unable to determine the proof of the spirit. Therefore we must rely heavily on our math and weights to ensure our product is consistently the same proof.
Another fun challenge presented by this spirit is that coffee, during the steeping process, will absorb liquids at various rates depending on the roast and grind of the coffee. Therefore, careful measurements must be made throughout the process to ensure accuracy and consistency.
